Romesco sauce is a traditional nutty Spanish Sauce that has its origin in the Catalan Region. It is used as a sauce, as a dip, or to spread on a slice of bread or flatbread.! You name it! Also, you will find a lot of variations, and most probably none of them will be the same. You will find the base ingredients plus a few small notes that will make every recipe special.
Today I wanted to share with you a simple recipe that differs a little bit from the original recipe. I did that to make it easier for you to replicate the recipe in the US.
In the original romesco sauce recipe, roasted tomatoes and bitxo peppers or nyora peppers. Also, traditionally, the romesco sauce was made using a mortar and pestle but if you want to save some time (especially if you’re making a bigger amount of sauce) use an electric food chopper.
It is served usually with chicken or steak but you can also serve it near a piece of fish or some roasted vegetables.

- Roasted Red Pepppers. I used freshly baked red peppers, but of course you can use also the canned baked peppers.
- Raw Almonds. I used raw and unblanched almonds. You can replace them with fried almonds or with blanched almonds it all depends on your preferences.
- Sun-dried Tomatoes. I used dried tomatoes preserved in oil. If you don’t have them under your hands, you can replace them with regular dried tomatoes.
- Fresh Garlic. I used fresh garlic because I prefer its taste. If it bothers you, you can replace it with garlic powder or to omit it alltogether.
- Vinegar. I used apple cider vinegar, but you can replace it with any type of white vinegar you prefer, such as wine or rice vinegar.
- Paprika. The paprika accentuates the taste of the baked pepper very well. If you prefer a smoky accent, pick smoked paprika instead. For a more spicy taste, add some chili pepper flakes.
- Olive Oil. The olive oil have a special place in this recipe because it is verry accentuated in the final result. Because of that, I recommend you to pay attention to this ingredient. Pick one that you like the most.
- Salt.
