🥘 Ingredients and Substitutes

  • Leftover Rice. It is better to use leftover rice for this recipe as if you will cook it right now without leaving it to sit overnight in the fridge, the rice will have too much starch, and it will be too sticky.
  • Luncheon meat.
  • Vegetables. I used a mix of carrots, corn, and broccoli but feel free to add any other vegetables you like to eat.
  • Spring Onions.
  • Soy Sauce. You can substitute the soy sauce with teriyaki sauce.

👩‍🍳 Step-by-step Directions

Take a wok, and heat the oil in it. After that, drop the corn and diced carrots. Cook them for 2-3 minutes.

🍽️ Serving Suggestions

This recipe is filling enough to be served as a main dish. Simply portion it out onto plates and enjoy!

If you’re looking for a side dish to go with a larger meal, this recipe works great as a side dish alongside grilled meats or stir-fried vegetables.

If you’re looking for an extra protein boost, consider topping each serving with a fried egg. The runny yolk will add a delicious richness to the dish.

If you like a bit of heat, consider serving this dish with some hot sauce or chili oil on the side. Just be sure to adjust the amount of soy sauce accordingly to avoid making the dish too salty.

🏆 Expert Tips. What to Pay Attention To?

  • Use leftover rice that has been chilled: The texture of the rice will be much better if it has been chilled in the fridge overnight. Freshly cooked rice can be too sticky and mushy for this recipe.
  • Cut the luncheon meat into small pieces: Cutting the luncheon meat into small pieces will ensure that it cooks evenly and gets crispy on all sides.
  • Don’t overcook the vegetables: The vegetables should be cooked until they are tender but still have a bit of crunch to them. Overcooked vegetables can become mushy and lose their flavor and nutritional value.
  • Add the soy sauce gradually: It’s important to add the soy sauce gradually, tasting it as you go, to ensure that the dish doesn’t become too salty. Remember that different brands of soy sauce can vary in saltiness, so adjust accordingly.
  • Don’t stir-fry the rice too vigorously: Stir-frying the rice too vigorously can cause it to break apart and become mushy. Use a gentle stirring motion to avoid this.

🤔 Answering Your Questions:

Can I use fresh rice instead of leftover rice?

Freshly cooked rice can be too sticky and mushy for this recipe. It’s best to use leftover rice that has been chilled in the fridge overnight.

Can I use a different type of meat?

Absolutely! This recipe is versatile and can be made with any type of meat you like, such as chicken, beef, or pork. Just be sure to cut it into small pieces so that it cooks evenly.

Can I add more vegetables?

Yes, you can add as many vegetables as you like. Just be sure to cut them into small, bite-sized pieces so that they cook evenly.

Can I use a different type of sauce instead of soy sauce?

You can experiment with different sauces, but keep in mind that the salty flavor of soy sauce is what gives this dish its signature taste. You can try using tamari or coconut aminos as a substitute, but be sure to adjust the amount to taste.
