Potato Wedges With Rosemary and Garlic in Oven

Are you looking for a simple recipe of potatoes roasted in the oven that you can’t go wrong with? Then you should save this classic recipe of potato wedges baked in the oven near some dried rosemary and a few garlic cloves.

I’m so amazed that there are so many ways to cook potatoes. There’s mash, fried potatoes, wedges, crisps, boiled potatoes, and roast potatoes. Did I forget anything? Probably.

Potatoes can be a perfect meal, and you can make them as healthy or as unhealthy as possible.

Today we are going to make wedges. Potato wedges are just as good as fries. Please don’t fight me, it’s true.

And they are healthier. Especially if they are homemade. And you don’t have to struggle with a fryer.

I always used to make wedges for myself as a kind of snack. They are quick and easy to prepare, and you can combine them with multiple meals. And the best part is they are very easy to make.

So, I have been making them for years, and every time I make these wedge potatoes, I love them even more.

You can eat them just as they are, like a snack, or I would suggest serving them near our sweet chilli chicken wings. Or you can serve them with our delicious roasted chicken with garlic and aromatic herbs. This one is a perfect combination that all of your guests will appreciate.

As for the sauce, one day, when I was preparing these potato wedges, I had extra dill and didn’t know what to do with it. So I thought I’d make a dill sauce. It turned out very delicious. The sauce is so light and goes so well with the potatoes.

You should definitely try the recipe! Give the sauce a chance, too.

Needed Ingredients:

  • 5 Potatoes (Use two big potatoes or 3 medium potatoes per serving).
  • Rosemary to taste
  • 1-2 Garlic
  • Salt and black pepper to taste.
  • 3-4 tablespoons of extra virgin olive oil.

Ingredients for the Dill Sauce:

  • 2 cloves of garlic
  • 2 tablespoons of chopped dill
  • Salt to taste
  • ½ cup of sour cream or yogurt.

Step-by-step Instructions:

1. Peel off the potatoes and wash them well.

Cut the potatoes into wedges. And move them into a pan.

Pour water over them until all of the potatoes are covered with water.

Put the pan on the stove, and when the water starts to boil, hold the potatoes on the stove for additional 5 minutes.

Quick note: Because we boil the potatoes a little, we eliminate the excess starch from them and make them healthier.

Take off the boiled potatoes from the water and put them on a baking pan.

Quick note: Cover the pan with baking paper to avoid sticking the potatoes to the pan.

Add all the condiments. In our case, we used rosemary, garlic, and salt. Also, you can replace the rosemary with oregano or a mix of aromatic herbs that you prefer.

You can add chili flakes if you want to make them spicier.

Sprinkle with olive oil and mix well all the ingredients. After that, distribute all the potato wedges evenly on the pan in a single layer to obtain a uniform crust.

Put the potatoes for about 20-25 minutes in the preheated oven at 180 C.

After this time, remove them from the oven, and the potatoes are ready to be served.

Quick Dipping Dill Sauce:

If you’re looking for a delicious dipping sauce that will go well with the potato wedges that we just did, give a try to this dipping sauce.

You will need to prepare a bunch of Dill, 2-3 garlic cloves, 1/2 cup of sour cream or yogurt, and a little bit of salt to taste.

Chopp the dill and garlic cloves well and put them on the plate over sour cream. Add the salt to taste and mix well all the ingredients.
