Single Cream

Bake the eggplants in the oven at 375°F for about 35 minutes.

Leave the eggplants to cool down, peel and chop them.

Then, chop the onion and caramelize it on medium heat, for about 5 minutes.

Add the flour, mix well and cook for about 3 minutes.

Add the chopped eggplants. Mix well and cook for 5 minutes on medium heat.

Add the single cream, reduce the heat and mix well.

Cook for 7 minutes and the eggplant and onion dip is ready to be enjoyed!
