Creamy Saffron Risotto

Risotto Allo Zafferano is a traditional Milanese dish that is very rich in colors and flavors. This ancient spice will give the dish a rich golden color that will impress your guests.

Put a few saffron  pistills into a glass. Pour hot water over and cover it until it will infuse.

Add the butter, chopped onions and cook them for 1-2 min at medium heat.

Add a ladle of broth into the pan.

After the broth has evaporated, add the rice into the pan.

Next, pour the wine over the rice and stir it continuously until all the wine will evaporate.

Add the broth into the pan. A single ladle at each step. Stir the rice until it will absorb the broth and repeat 5-6 times.

Five minutes before the rice is ready, pour the saffron infusion.

Mix well and let the rice to boil for another 5 minutes, stirring constantly.

When the rice will be cooked “al dente” drop the rest of the butter into the pan.

 Turn off the heat, pour all the parmesan over the rice and incorporate it well.
