Air Fryer Eggplant Slices With Mozzarella and Parmesan

Crispy air fryer eggplant slices topped with parmesan and mozzarella cheese. These eggplant rolls have a crust-like deep-fried but they are a lot healthier as we are making them in the air fryer without using oil.

Ingredients:

Take a bowl and mix in it the breadcrumbs with salt and parmesan.

In another bowl, beat two eggs.

Soak each slice of eggplant in the beaten eggs firstly (on both sides).

Right after that, soak the eggplant slices into parmesan and breadcrumbs mixture.

Put the eggplant slices in the preheated air fryer basket and cook them for 10-12 minutes at 400F.

Now, cover the eggplants with tomato sauce.

Add over a few slices of mozzarella and shredded parmesan cheese.

Bake them in air fryer until the cheese will melt.

It will take about 5 min.

Our eggplant slices are ready to be served and enjoyed!

Consider serving them near a marinara sauce.
