Homemade Sicilian Sausages

Healthy homemade Sicilian sausages without additives and preservatives. They are easier to make than you think.

1 ½ lb of pork meat ⅓ cup of dry white wine. 1 teaspoon of salt. ⅔ tablespoon of black pepper. 3 teaspoons of fennel seeds.

Ground half of the meat, and the other half, cut it into small cubes.

Pour a glass of white wine and season the meat with fennel, salt and pepper. Mix well.

Use an extension to your meat grinder to fill the sausages.

If you don't have the extension you can buy a special plastic cone.

Fill Sausages

Soak in water the casings to make them soft.

Roll the hog casings on the tube as you can see in the photo.

Make a knot at the end of the hog casing, and fill the hog casings with the meat composition.

Don’t fill the hog casing too densely, as it may crack during the cooking.

Serve them with some spicy stewed beans with tomatoes.
