These mini cubed potatoes that are easy to make, are tossed in olive oil, salt, and aromatic herbs are a perfect alternative to the classic roasted potato wedges.

Wash well and peel the potatoes.

Cut the potatoes into ½" cubes.

Boil the potatoes.

After the water starts to boil, let the potatoes boil for another 5 min. Pour the water.

Season with rosemary, salt and olive oil.

Spread evenly all the potatoes on the oven tray.

Cook the potatoes at 400°F for 35 minutes in the preheated oven.
