Make the roux. On medium heat, melt the butter and mix it with the flour.
Gradually add the evaporated milk and mix continuously.
After the sauce boiled, turn off the heat and add the cheddar cheese. Mix well.
Boil the pasta for less than 2 minutes that is indicated on the package. Pour over the pasta the creamy sauce.
Add the grated mozzarella cheese and bake at 350°F (180°C) for 7-10 minutes or until the cheese melts.
