HomemadeVegetable Broth

Find how to make your own vegetable broth at home using leftover vegetables. It is easy to make and you can use the vegetable stock for soups, stews and more.

For the broth, I used:

Carrots 2 Onions Celery Stalk Celery Root Hot Pepper Parsley Cloves Garlic Coriander Ginger Dried Tomatoes Parmesan

To get a richer flavor of the vegetable stock, consider to caramelize the vegetables in the oven.

Set the maximum temp, and bake them for 15-25 minutes. We don't need to cook them, only to caramelize.

Take a large pan, put the caramelized vegetables in. Then add parsley, coriander, ginger, hot pepper, parmesan peel, and dried tomatoes.

Wait until the vegetables will start to boil. Then, set the heat to low, and let them boil for one more hour.

After that, remove the vegetables from the pan, and strain the broth. Adjust the salt if is needed. Enjoy!
