Peperonata Italian Bell Pepper Stew

Delicious Italian Peperonata is a bell pepper stew with tomatoes, onions, cappers, and garlic cloves. It is easy to make, and you can serve it as a snack or a side dish.

Wash and clean all the vegetables.

Chop the onions in julienne method.

Peel the tomatoes. Make x-cuts on tomatoes and pour over boiled water.

Because of the thermal shock, the tomatoes will peel easily.

Cut the tomatoes into cubes.

Cut the bell peppers into slices.

Crush the garlic cloves.

Now, in a wok, pour olive oil, crushed garlic, and chopped onions. Season with paprika over.

Add bell peppers over the onions and garlic and mix well. Cook the vegetables for about 7 minutes.

Add cappers. Salted or unsalted.

Add vinegar and sugar over the vegetables.

Add tomatoes and mix well. Cook everything for 15 min. on low heat.

Add dried basil or other aromatic herbs. Mix well.
