Romanian Meatball Soup

A classic and traditional Romanian soup with meatballs simmered in a flavorful vegetable broth, and some fresh herbs in the end like parsley or dill.

In a bowl, mix the minced meat, a raw egg, and season with salt and pepper to taste.

Mix all the ingredients well, and leave the meat to marinate as long as you prepare the vegetables for the soup.

Cut the carrots, celery, onion, tomatoes, and garlic into cubes.

Next, pour oil into the pan, warm it a little bit, and pour over all the vegetables.

Cook the vegetables for about 5-7 minutes.

The vegetables will get softer and will give a more rich flavourful taste to the soup.

Add 8-10 cups of water.

Salt the soup to your taste and boil the vegetables for 5 min.

Add the chopped potatoes and bell peppers.

Simmer the soup until it starts to boil again.

Add the meatballs one by one into the soup.

Boil the soup until the potatoes and meatballs are ready. Around 20 min.

Traditionally, the soup is served with sour cream, chili pepper, and finely chopped parsley.
