Red Pepper

Using a wok, gently cook the pork belly over low heat.

Once the fat has melted, raise the heat and cook for a few minutes to achieve a delightful crust on the pork belly.

Place the meat aside to allow the drainage of any excess fat.

Finely chop the red pepper, spring onions, and garlic, then cook them for about 30 seconds.

Return the pork belly to the wok, placing it over the sautéed vegetables. Cook for 2-3 minutes.
