Easy recipe of how to make your own delicious homemade vegetable broth from leftover vegetables.


Needed Ingredients:

 2 Carrots 2 Onions 1 Celery Stalk ½ cup Celery Root 1 Hot Pepper Parsley 3 Cloves Garlic Coriander Ginger about 1". 3 Dried Tomatoes Parmesan peel 1 tablespoon Mix of dehydrated vegetables

If you want a more intense taste of the broth, then caramelize the vegetables in the oven for a few min.

I caramelized a stem and root of celery, onions, a few cloves of garlic, and two carrots.

Set the oven to maximum temperature and grill the vegetables for about 15-30 minutes.

They don't need to cook. We need just to caramelize them a little, as in the image.

Now, move the cooked vegetables in a larger pan and add next to them the parsley, coriander, ginger, a whole hot pepper, and dried tomatoes. Optionally a mix of dehydrated vegetables and a piece of parmesan peel.

Cover everything with cold water.

Wait until the water started to boil, and after that, boil the vegetables for one hour on low heat.


In the end, remove the vegetables from our vegetable soup and strain the broth.

At this stage, you can taste and adjust the salt if is needed.
