Vegetarian Ukrainian Borscht (Beet Soup)

Are you looking for an explosion of vitamins? Give a try to this delicious and authentic Vegetarian Ukrainian Borscht. All you will need to do is to chop the vegetables, to fry them a little bit then to leave them to boil for a while. If you didn't tried yet this beet soup, I highly recommend doing so!

– Beet – Carrots – Potatoes – Bell pepper – Onions – Tomatoes – Parsley – Green beans – Cabbage – Garlics – Chili pepper – Olive oil – Optionally, sour cream

Ingredients:

Chop all the vegetables as in the photo below:

Take a large pot, pour olive oil in it and fry a little bit the onions and garlic cloves.

When the onions will become transparent add potatoes and carrots. Brown them for 8-10 minutes.

Add the beet and tomato juice. Let everything to simmer for 5-7 minutes.

Add the green beans, chili pepper, bay leaf, and thyme. Mix well.

Pour water or vegetable broth over the ingredients until all of them will be covered in water. Boil for 15 minutes.

When the potatoes will be almost ready, add the cabbage. Mix and boil for another 7 minutes.

Taste the soup and adjust it to salt and acidity.

Mix well and turn off the hob. Add chopped parsley and leave to rest for 20 minutes.

Serve with extra freshly chopped parsley, and a spoon of sour cream.
