- Whole Chicken - Aromatic herbs - Garlic - Chili Pepper - Butter - Lemon Zest - Salt and pepper

Prepare the marinade for the chicken. Chop the garlic with rosemary, thyme, and basil.

Grind them using a mortar and pestle. Season with salt and pepper.

Add over the lemon zest from a lemon.

Add the room-temperature-butter and chili flakes.

Mix everything well.

Cover the chicken with the marinade on all sides and leave it to marinate for at least 30 minutes.

Cover the chicken with aluminum foil and bake it for about 50 minutes at 355F. For a golden skin, after 50 min, remove the foil and cook for another 15-20 minutes.

Serve the chicken whole or portioned.

For an extra color, consider sprinkle over the roasted chicken some freshly chopped parsley.
