Tender, juicy and mouth-watering air fryer pork loin that is super easy to make at home. Seasoned with simple spices and served in a homemade tomato sauce with roasted garlic made also in the air fryer.
Put the meat on a plate and pour over it all the spices and oil.
1.5 lb Pork Loin
Massage the meat well so that the spices and oil are soaked on all sides. Let the meat marinate for at least 30 minutes.
⅛ teaspoon Fennel Seeds, ⅛ teaspoon Thyme, ⅛ teaspoon Oregano, ⅛ teaspoon Rosemary, ⅛ teaspoon Black Pepper, ⅛ teaspoon Bay Leaf, ½ teaspoon Salt, 2 teaspoons Olive Oil
Place the meat in the air fryer basket with the vegetables and cook the meat at 400°F (200°C) for 10 minutes to form a quick crust that will stop internal juice leakage.
13 oz Tomato, 1 piece Garlic
After that, reduce the temperature to 300°F (150°C) and cook the meat for about 25-35 minutes. For best results, I recommend using a meat thermometer to see when the internal temperature of the meat reaches 160°F / 72°C.
Tomato Sauce
Peel the vegetables that we cook together with the pork and add over them the sauce that drained from the meat while it cooked.
13 oz Tomato, 1 piece Garlic
Mix everything with a fork or blender.
Optionally, you can add chopped parsley or other herbs you prefer.
Serving
Serve the meat near the tomato sauce.

Notes
After the meat is cooked, place it on a plate and cover it with aluminum foil. Let it rest for 15-20 minutes. By leaving the meat to rest of half of the cooking time, the meat will become juicier in the end.
