Crumble some feta cheese over the top.

Notes
While feta is the star in this recipe, other cheeses like blue cheese or even Brie can bring a different flavor twist to these tartlets. If you're feeling adventurous, mix and match!
For an intensified flavor, you can roast the beets instead of boiling. Just wrap them in foil and roast at 400°F (around 205°C) until tender. The roasted flavor pairs wonderfully with the caramelized onions.
For a varied texture, consider adding some toasted pine nuts or walnuts on top of the tartlets before serving. The crunchy contrast can be a delightful surprise!
Given that feta is inherently salty, go easy on any additional salt until you've tasted the assembled tartlets. Adjust seasoning accordingly.
