What Are Kabana Sausages?

Kabana is a dry spicy smoked salami, very popular in Australia and New Zealand. The kabana sausages are usually made from pork and beef and they are very similar to the Polish Kabanos or Cabanossi.

These savory sausages are usually full of spices and have a smoky flavor. You may find them soft or with a very dry texture depending on the method of how they were prepared.

As per serving, the kabanosy is usually cut into bite-sized slices and served as cold appetizers or served as a snack.

When the kabana are served as snacks, they usually are served near different types of cheese, crackers, or small pieces of bread.

Can You Freeze Kabana Sausages?

Yes, you can easily freeze the kabana sausages (Polish Kabanosy) and keep them frozen for up to 6 months in your freezer. To keep their original spicy flavor, make sure that you are keeping them in an air-tight container in the freezer.

If you follow a few very simple rules, then you will not meet any difficulties while you will try to freeze and defrost the kabana sausages.

Make sure that you are using good quality freezing bags, or containers that close well.

Quick Note: if you want even better results, you may consider wrapping them up in plastic wrap to make sure that the spices will remain in their place.

After that, stick a label on the freezer bag or freezer container with the date when you freeze them, and also write down the expiration date (6 months from now) to know exactly for how long the kabana sausages are good to keep in the freezer.

How Long Can You Freeze Kabana Sausages?

It all depends on how they were cooked. As a general rule, you can keep them safe in the fridge for up to 6 months. My husband likes them so much that usually, they don’t sit in our fridge for more than one month.

How to Keep the Kabana Sausages for Longer?

Usually, the kabana sausages come smoked, which means that they are already cooked and safe to eat. If you freeze them, they will stay for up to 6 months in the freezer. If you notice that the expiration date is getting close and you still haven’t eaten them, you may consider cooking the cabana sausages and freezing the new meal for another few months. As an idea, you can prepare from them a delicious Polish cabanossi hunter stew with beans. It’s amazing!

How to Defrost the Kabana Sausages?

The best and safest way to defrost the kabana sauces is to let them thaw slowly in the fridge overnight. If you are slow on time, you can put them on a pan and start cooking them slowly.

As they are thin in size, they will defrost quickly. After a few minutes after you see that they defrosted, you can increase the heat on the pan and continue cooking them as usual.

Defrosting the Cabanossi in the Microwave

As the kabana sausages (cabanossi) are thin, they may start the cooking process.

Later after you will put them in the pan with other ingredients,
You may risk overcooking them. Because of that, I recommend putting them directly on the pan and starting the cooking process there if you are looking for some ways to defrost cabanossi quickly.

Can You Refreeze the Kabana Sausages?

I don’t recommend freezing kabana sausages multiple times as you may risk growing bacteria on them and you will also lose their texture.

If you have a large amount of Cabanossi, I would recommend dividing them into a few packages and defrosting only one package at a time.
